A coffee cherry is made up of several layers, and after the cherries are picked, they require processing which involves removing these layers. This can be done in different ways and each process can result in a different cup profile on the coffee.

Washed Process

Washed Process

Most commonly available process, which gives cleaner, more crisp tasting notes than natural processed coffees. The body of a brewed washed coffee is lighter.

Heavy bodied cups of coffee, with deeper and complex tasting notes due to that time spent developing extra flavors

Honey Process

Honey Process

Richer notes of syrupy sweetness thanks to the left over mucilage. There is more pronounced acidity as well, but more mellow than washed processed coffees. Honey processed include black honey, red honey, and yellow honey.

Anaerobic Process

Generally sweeter, fruitier, a variety of different flavors depending on the additives that have been put into the mix, as well as the base starting bean.

We have the team of coffee experts such as Q- grader, Quality Control Manager, Roaster for more than 10 years experience in coffee industry in India.

It is important to set up the roasting profile based on each coffee by the experienced professionals in order to develop the flavor. This profiling would require the sensory and technical analysis to maximize the potential of coffee beans originally has while controling the temperature, the gas exhaust, duration of roasting. in the broader category, we have light, medium, medium dark, dark roast where time of roasting differs to be adjusted based on each coffee profile.

Experts Practice

Cupping and Scoring - We have our inhouse cupping room where we check daily cupping score and characteristics of coffee on every batch we roast. This process helps us to improve the overall quality control consistently while we can maximize the potential of what each coffee beans has by developing the roasting profile.
